Margarine is a tough one to get right, and I found that using Earth Balance for toasts and pan cooking work well, but that Nucoa is an excellent, completely dairy-derivative-free substitute for baking recipes, as it’s hard to burn. And it’s cheaper, too!

I should insist on using the Plain flavour, unless otherwise stated in my recipes: I tried out their other flavours (French Onion, Herbs & Chives, Garlic & Herb, etc.) when they happened to present themselves in the supermarket, but I’m a Plain Jane, and they just didn’t make the cut.
